This turned out to be sooo yummy!  My husband & I loved it, and the best part is it was super easy to make!  This recipe came from my mom's friend Brenna.  It's the perfect appetizer for a family gathering.  Especially with football season approaching.  You will have no complaints from your guest with this dip in front of them, as you all watch your favorite team battle it out on TV.

With this batch I also used it to add a little something special to our dinner.  I put the dip over baked chicken I was making for dinner.  This was Brenna's suggestion and she couldn't have been more right on.  Delicious!

Artichoke Spinach Dip by Brenna

Ingredients:

1 stick of butter, 1 onion, 8oz cream cheese, 8oz sour cream, 8oz monterey jack cheese or cheddar cheese, 2 boxes of frozen spinach, 1 can of artichokes, 3/4 cups parmesan cheese

Instructions:

1. Chop onion and saute in butter until caramelized.

2. After onions are caramelized let it cool.

3. Once cool mix 8oz cream cheese, 8oz sour cream, 6oz monterey jack (or cheddar) cheese, 2 boxes of spinach (thaw first and squeeze out excess water before adding to mix), 1 can of artichokes, 1/2 cup of parmesan cheese

4. Mix together thoroughly

5. Place in casserole dish.  Top with remaining monterey or cheddar cheese, and parmesan cheese

6. Bake at 375* for 15-25 minutes

** I used 4 oz of monterey jack cheese and 4 oz of cheddar cheese because I couldn't decide.

***Oh I want to note that I used low fat cream cheese and light sour cream and I didn't taste diety. :)

Enjoy!
