Summer Salad
Betty's Salad is on the menu this week. This recipe comes from my Aunt Barb. Not only is this a great salad for summer on it's own, but it's also a great compliment to any other family meal you can think of. The real gem of this recipe is it's dressing. If you like a sweet and tangy combination when it comes to your dressings then this is one to try. Betty's Salad by Aunt Barb Ingredients: 1 (12 ounce) package of spinach, 6 hard boiled eggs (sliced), 1 (6 ounce) can bean sprouts (drained), 1 (6 ounce) can water chestnuts (drained/sliced), 1 jar of real bacon bits (crumbled), 1 cup salad oil, 1/4 teaspoon salt, 3/4 cup sugar, 1/3 cup Ketchup, 1/4 cup white vinegar, 1 small onion, 1 Tbsp Worcestershire sauce Instructions: Salad dressing: In blender mix 1 cup salad oil, 1/4 tsp salt, 3/4 cup sugar, 1/3 cup ketchup, 1/4 cup white vinegar, 1 small onion, & 1 Tbsp Worcestershire sauce Salad: Layer ingredients in order listed below Package of Spinach**, 6 sliced hard boiled eggs, 1 can of bean sprouts, 1 can of water chestnuts, 1 jar of crumbled bacon Pour dressing over salad and mix. **as suggested by my Aunt I used for my greens 1/2 spinach and 1/2 romaine lettuce. Enjoy!
