Zucchini Pancakes
But lets not deviate from the recipe at hand, this Zucchini Pancake recipe that came from my Aunt Chris. The large zucchini I used was serendipitously given to us by our friend's Brian and Colleen from their garden last week. I was stoked to take it home, I knew just the right recipe for it. Many thanks to Brian and Colleen for their generosity! I love potato pancakes, a staple in our house growing up. So I was excited to switch up the ingredients and make a new kind of pancake. Tim and I ate through the whole batch with no problem (the batch made about 10 pancakes). We were little piggies that night. :) He switch between applesauce and sour cream as his topping while I stuck with sour cream as my topping. Zucchini Pancakes by Aunt Chris Ingredients: 1 lb zucchini, 1 bunch scallions, 1 egg, 1/2 cup flour, 1/3 cup parmesan cheese, black pepper (to taste), oil Instructions: 1. Grade zucchini and mince scallions 2. Mix zucchini, scallions, egg, flour, cheese and pepper 3. Heat oil in frying pan or on cast iron griddle 4. Put a heaping forkful of mixture on the heated surface. Pressing it into a circle 5. Cook until brown and crispy on both sides.
