Old Fashion Southern Caramel Icing
Get ready to be on a sugar high with this recipe! This week is my mother-in-law's birthday so I asked her what her favorite icing/cake combination was. I was thinking she'd say chocolate and vanilla or buttercream or even chocolate and chocolate. That was not the case. I was half right as she likes chocolate cake but for her frosting her favorite is Southern Style Caramel Frosting. Now I had never heard of or tasted this kind of frosting. I didn't even know where to get it, it sounded so gourmet. With the help of the internet, I put my research skills to work and found a recipe that seemed manageable. You can find the same recipe at the Cupcake Project, just click on the link. As, Stef said from the Cupcake Project this recipe takes some patience and I totally agree. I think all in all it took me an hour to make this icing. Stef's instructions were easy to follow. The only part I found tricky was melting the 1/2 cup of sugar and then incorporating into the saucepan mixture. The melted sugar ended up clumping up. So I don't think I had the saucepan mixture warm enough. Either that or I wasn't fast enough mixing the two together. Which ever it was, it's the part of the recipe I'll have to work on. Also she is not kidding when she says the icing is harder to apply the longer it sits out. I'd say cool the icing for 5 minutes max and then start spreading it on your cupcakes or cake or whatever your heart desires. The end result is that this icing recipe got my husbands stamp of approval. So it can move on to the "birthday" round. I'll find out tonight if the rest of the family agrees, especially the birthday girl. My vote is that it's a recipe well worth trying when you have the time.
