Back in the Kitchen
I'm excited to get back in the kitchen after being on hiatus for a few weeks. This week I decided to back to an old favorite recipe of mine, Golden Chicken and Vegetables. It is actually one of the first dishes I learned to make after moving to Massachusetts. Before I moved my staples were grilled cheese, ramen, and pasta. Since I was far far away from home, and my new roommate was an amazing cook I decide I needed to set up my game. So here's the recipe. Enjoy! Golden Chicken and Vegetables- (found in 365 Favorite Brand Name Stir-Fry Recipes & More) Ingredients: 1 boneless, skinless chicken breast half (I used 2) 1 tsp Kikkoman Stir-Fry sauce 3 Tbsp vegetable oil, divided 1 medium onion, thinly sliced 1 large clove of garlic, slivered 2 carrots, cut into julienne strips 1 stalk celery, cut diagonally into thin slices 1/4 cup Kikkoman Stir-Fry sauce 1 Tbsp water 1 Tbsp sesame seed, toasted (I left this out) 1/2 tsp Oriental sesame oil Instructions: Cut chicken into thin narrow strips; coat with 1 tsp stir-fry sauce in small bowl. Heat 1 Tbsp vegetable oil in hot wok or large skillet over medium-high heat. Add chicken and stir-fry or 2 minutes; remove from pan. Heat remaining 2 Tbsp of oil in same pan. Add onion and garlic; stir-fry 2 minutes. Add carrots and celery; stir-fry 2 minutes longer. Combine 1/4 cup stir-fry sauce and water; add to pan with chicken and sesame seed. Cook, stirring until chicken and vegetables are coated with sauce and heated through. remove from heat; stir in sesame oil.
