Actually it should be One for the Trail.  This week I decided to make Snowball cookies (aka Russian Tea Cakes).  I've been on a cookie kick if you couldn't already tell.  I know these are typically a winter holiday treat but they are also one of my Dad's favorite cookies.  So one may ask, what's the occasion for this special batch?  Well, in just a few days my Dad (age 65) is going to take on the Appalachian Trail.  My husband and I are driving him to Georgia this Saturday.  We'll stay the night and then send him on his way April 1st.  A fitting day to start this adventure, since it is my Jaja's (his dad's) birthday.  Dad's been planning this adventure for the last 2 years.  I'm so very proud of him and excited for him.  This is mixed with an itsy-bitsy twinge of fear (I thank my husband for keeping this part of me in check).  As Dad says, "we'll take it day by day, one foot in front of the other", since he's not just 'day hiking' this massive trail.  His goal is to hike it all the way to Maine, over the next 6 months.  So with that ambition, determination, and courage, the least I could do was to send him off with a batch of his favorite cookies.  :)

Happy Trails!

P.S. I don't have a recipe for these cookies because I sort of cheated this week.  You can easily make them with a Betty Crocker box mix.
